Cooking
As my life is at the moment, the only time I am home to actually cook anything for dinner is Monday night. I don't know if it is the novelty of having a home cooked meal for those nights or what, but I've realized that I am one good cook. Seriously.
Two weeks ago, I make some rice, beans and an assortment of fresh vegetables sauteed with some olive oil and garlc. That meal was so good that I ended up eating everything and did not have leftovers. Not a good thing because I made enough to cover two meals.
Then this week I made a simple stir fry with vegetables and tofu and I can tell you that it was the best tofu I have had in a very long time! Actually, I don't know when I had better tofu. It was crispy on the outside and soft in the middle. It was just really really good. I was able to make that meal last for 2 meals because I took the leftovers to work with me the next day.
I just wish I had more time to cook because I enjoy it so much!

I think you should write a cookbook, one that includes spinach pie and dumpling soup. You are a GREAT cook! You were the first person to make spinach taste good for me! Now I love it.

I love cooking so much too! I haven't really cooked in awhile...I might need to know more about how you cooked the tofu and vegetables!
